Green onions are my cancer-killing fairy dust! I sprinkle them on as many meals as possible.

Today, I’m batch cooking a bean & veggie-rich homemade chili recipe, full of chopped vegetables, fresh spices, mixed beans, and onions galore!

I’ve got spanish onions hidden within the recipe, along with tomatoes, green peppers, mushrooms, zucchini, carrots, celery, garlic, and loads of green onions to go on top once the slow cooker says my chili is ready to pop into the freezer for easy grab-and-go meals.

Green onions are from the #allium vegetable family (which includes garlic & onions), and they’re rich in #antioxidants and sulfur-contianing compounds that are known to decrease tumor development and slow the spread of ovarian & lung cancer.

I’ve attached a table from a research paper that’s been really influential for my cancer-fighting nutrition. Every day I try to eat multiple vegetables from the “high impact” and “very high impact” columns of foods that are known to fight and kill cancer cells.

I think this has played a *significant* role (although isn’t the only factor) for why I was able to put a stage 3 aggressive ovarian cancer into remission in only 5 months, even after turning down chemo as a treatment option.

DISCLAIMER: However, I think it’s prudent for me to note that my cancer-fighting journey isn’t the “right” or “only” way to approach things for someone facing a scary cancer diagnosis, nor am I anti-chemo / anti-Western medicine. Healthy eating & strategic vegetable selection was just one small part of what helped me find my way back to health through this crazy ordeal, while trusting my intuition and sticking to my roots as a whole-foods-based Registered Dietitian.

P.S. Batch cooking Chili Recipe

–> I totally wing it each time, but here’s what’s cooking up right now:

• 2 green peppers, chopped
• 2 zucchini, chopped
• 1 spanish onion, chopped
• 3 cups mushrooms, chopped
• 1 can no-salt-added diced tomatoes
• 1-2 large carrots, chopped
• 1-2 stalks celery, chopped
• 2 cloves garlic, minced
• 1 can no-salt-added black beans, drained
• 1 can no-salt-added red kidney beans, drained
• 1 small package (approx. 500 g) extra lean ground beef, cooked (optional, could totally be taken out to go #vegan)
• 1 jar low-sodium tomato sauce
• a full bunch of green onions, chopped (to go on top once cooked)

Homemade Chili Spice Blend
• 2 Tbsp chili powder
• 1 Tbsp cumin
• 1 tsp garlic powder
• 1/4 tsp cayenne pepper
• generous serving of freshly ground black pepper
• tiny pinch of freshly ground Himalayan salt
